Austenitic stainless steel corrosion resistance comes from the formation of chromium oxide protective layer on the metal surface. Carbon steel has less chromium, and small amounts of chromium cannot form that chromium oxide layer.

Instead, oxygen combines with iron and causes iron oxide and rust.
